Bacon Maple Pecan Chocolate Brownies


BACON MAPLE PECAN CHOCOLATE BROWNIES

Sweet and salty ... what a combo. Here's a twist on my decadent chocolate brownie.

The pecans are so delicious ... and are good to just share in a bowl for nibbling, package up as a gift, or add some chilli to them and serve as an accompaniment to drinks. But in this recipe, they stay on the top of the brownie, to create a really interesting contrasting texture to the brownies, especially also with the sweet, salty bacon.

You of course can omit the bacon from the brownies if you please ... but I encourage you not

to dismiss it until you try it.

Mixing the pecans through the brownie before baking is fine also, but I dig the contrast of the moist brownie underneath and the nutty crunch on the top. Chocolate chips are also great folded through the brownie mix before cooking.

BACON MAPLE PECAN CHOCOLATE BROWNIES

INGREDIENTS

BROWNIES

375g dark chocolate callets (buttons)

375g unsalted butter (chopped)

250g caster sugar

100g brown sugar

6 large eggs (freerange always)

1 tsp good quality vanilla extract

250g plain flour

MAPLE PECANS

180g pecans

10 rashes streaky bacon (rindless)

30g brown sugar

30g unsalted butter

30g maple syrup

½ tsp sea salt flakes

METHOD

MAPLE PECANS

Melt butter and brown sugar together in microwave or saucepan.

Add maple syrup, stir to combine.

Add pecans, folding through until completely covered.

Place pecans on baking tray lined with baking paper, separating until they are a single layer.

Bake at 180 deg C, for around 15mins, stirring once after about 7-8 mins until lightly golden. Watch the oven, don’t cook until black!

Roughly chop pecans when cool and add sea salt.

BROWNIES

Preheat oven to 180°C.

Cook streaky bacon until crisp.

Drain on paper towel. When cool, crumble/chop. Combine with cooled chopped pecans.

Melt chocolate and butter together in microwave or in bowl over simmering pan of water.

Add caster sugar and brown sugar, gently whisking til combined.

Add eggs, lightly beaten, gently whisking til combined.

Add vanilla.

Fold through flour til combined.

Pour into baking paper lined baking pan, (around 24cm x 35cm)

Cook at 180 Deg C, for 10-15 mins, or until top is starting to set, remove from oven and crumble pecan and bacon mix over the brownie, and continue to bake until desired baked consistency. (when a skewer is insterted in the middle, it comes out with sticky crumbs on it, not just liquid).
